  • 1 cup cucumber, chopped small cubes
  • 1 cup tomato, chopped small cubes
  • 1/2 cup carrot, grated or julienne
  • 1/2 cup capsicum (bell pepper), chopped red or green, small pieces
  • 1/4 cup onion, finely chopped
  • 1 tbsp fresh coriander leaves, chopped
  • 1 tbsp lemon juice freshly squeezed
  • 1/4 tsp salt or to taste
  • 1/4 tsp red chilli powder optional, for mild heat

Method
 

  1. Wash all vegetables thoroughly under running water.
  2. Chop cucumber, tomato, capsicum and onion into small, bite-sized pieces. Grate or julienne the carrot. Chop the coriander leaves.
  3. In a mixing bowl, combine cucumber, tomato, carrot, capsicum, onion and coriander.
  4. Add lemon juice, salt and red chilli powder (if using). Toss the salad gently so dressing coats all vegetables evenly.
  5. Taste and adjust seasoning if needed. Serve immediately or chill for 5–10 minutes before serving.

Notes

You can add other crunchy vegetables like grated beetroot or salad greens. For extra protein, boiled chickpeas or sprouts work well too.
