
Indian Mixed Vegetable Salad
A simple, fresh and healthy mixed salad with Indian-style chopped vegetables and light lemon dressing — ready in 10 minutes.

- Wash all vegetables thoroughly under running water.
- Chop cucumber, tomato, capsicum and onion into small, bite-sized pieces. Grate or julienne the carrot. Chop the coriander leaves.
- In a mixing bowl, combine cucumber, tomato, carrot, capsicum, onion and coriander.
- Add lemon juice, salt and red chilli powder (if using). Toss the salad gently so dressing coats all vegetables evenly.
- Taste and adjust seasoning if needed. Serve immediately or chill for 5–10 minutes before serving.
Notes
You can add other crunchy vegetables like grated beetroot or salad greens. For extra protein, boiled chickpeas or sprouts work well too.
