
Indian Style Mushroom Stir Fry
A simple, healthy Indian mushroom stir fry made with onions, spices and mushrooms — ready in under 30 minutes. Great with roti, rice or as sandwich stuffing.

- Clean mushrooms: wipe with a damp cloth or rinse quickly and pat dry, then slice them.
- Heat oil in a pan on medium heat. Add cumin seeds and let them crackle for a few seconds.
- Add sliced onions and sauté on low-medium heat until they become translucent or lightly golden.
- Add the sliced mushrooms and stir fry on medium-high heat. The mushrooms will release water — keep stirring until the water evaporates and mushrooms start to look glossy and slightly browned at edges.
- Once water has dried, add turmeric, red chili powder, coriander powder, garam masala and sliced green chili. Mix well to coat mushrooms evenly.
- Add salt to taste. Stir for another minute so spices blend in. Then switch off the heat.
- Sprinkle chopped coriander leaves, mix gently, and serve hot with chapati, roti, paratha or rice. Can also be used as sandwich or wrap stuffing.
Notes
You can adjust spice levels to your taste. This stir fry can be doubled easily. For added nutrition and texture, you may toss in chopped bell pepper or peas while sautéing mushrooms.
