  • 1 cup Rice raw
  • 1/2 cup Moong dal (yellow) raw
  • 1 tbsp Ghee for roasting spices
  • 1 tsp Cumin seeds
  • 1/2 tsp Turmeric powder
  • 1 tsp Salt adjust later while cooking
  • 1/2 tsp Black pepper powder
  • 2 tbsp Dried vegetables (optional) carrot, beans, peas

Equipment

  • Heavy pan or kadhai
  • Spatula
  • Airtight container or pouches

Method
 

  1. Dry roast rice and moong dal on low flame for 3 to 4 minutes until they lose raw smell. Do not brown.
  2. Cool completely and transfer to a mixing bowl.
  3. Heat ghee in a small pan and add cumin seeds. Let them crackle.
  4. Switch off the flame and mix in turmeric, salt and pepper.
  5. Add this spice mix to the roasted dal and rice. Add dried vegetables if using. Mix well.
  6. Store in an airtight container or make 4 small premix pouches.
  7. To cook: Add 1 premix pouch + 3 cups water in a cooker. Cook for 3 to 4 whistles for soft khichdi.

Notes

You can add dried spinach or dried methi for extra nutrition. For a thinner consistency, add more water while cooking.
