
Instant Khichdi Premix
A healthy and travel-friendly instant khichdi premix made with dal, rice and mild spices. Easy to cook and ready in minutes.

Method
- Dry roast rice and moong dal on low flame for 3 to 4 minutes until they lose raw smell. Do not brown.
- Cool completely and transfer to a mixing bowl.
- Heat ghee in a small pan and add cumin seeds. Let them crackle.
- Switch off the flame and mix in turmeric, salt and pepper.
- Add this spice mix to the roasted dal and rice. Add dried vegetables if using. Mix well.
- Store in an airtight container or make 4 small premix pouches.
- To cook: Add 1 premix pouch + 3 cups water in a cooker. Cook for 3 to 4 whistles for soft khichdi.
Notes
You can add dried spinach or dried methi for extra nutrition. For a thinner consistency, add more water while cooking.
