
Lauki Dosa (Bottle Gourd Dosa)
Healthy, crispy and instant lauki dosa made from bottle gourd, rice flour and rava — a light and nutritious breakfast.

Method
- Peel the lauki, remove seeds, chop roughly and blend with a little water into a smooth paste.
- In a large bowl, add rice flour, rava, salt and the lauki paste. Pour water and whisk to a smooth batter.
- Add chopped onion, green chillies, cumin and coriander leaves to the batter. Mix well. Let batter rest for 5–10 minutes so rava softens.
- Heat a non-stick tawa on medium heat. Pour a ladleful of batter and spread gently (like a thin pancake). Drizzle 1 tsp oil around edges.
- Cook for about 2 minutes until underside is crisp and golden. Flip or fold (optional) and cook other side if needed.
- Serve hot with coconut chutney, tomato chutney or sambar.
Notes
Resting the batter helps rava absorb water and gives a better texture. You can skip onion/chilli for a milder version. Serve dosas hot for crispiness.
