  • 1/2 medium bottle gourd (lauki) peeled and chopped (remove seeds)
  • 1.5 cup rice flour
  • 1/2 cup rava / semolina (suji) coarse
  • 3/4 tsp salt or to taste
  • 4 cup water for batter
  • 1 onion finely chopped (optional)
  • 2 green chillies finely chopped (optional)
  • 1 tsp cumin seeds
  • 2 tbsp fresh coriander leaves finely chopped
  • oil for roasting dosas (about 1 tsp per dosa)

Method
 

  1. Peel the lauki, remove seeds, chop roughly and blend with a little water into a smooth paste.
  2. In a large bowl, add rice flour, rava, salt and the lauki paste. Pour water and whisk to a smooth batter.
  3. Add chopped onion, green chillies, cumin and coriander leaves to the batter. Mix well. Let batter rest for 5–10 minutes so rava softens.
  4. Heat a non-stick tawa on medium heat. Pour a ladleful of batter and spread gently (like a thin pancake). Drizzle 1 tsp oil around edges.
  5. Cook for about 2 minutes until underside is crisp and golden. Flip or fold (optional) and cook other side if needed.
  6. Serve hot with coconut chutney, tomato chutney or sambar.

Notes

Resting the batter helps rava absorb water and gives a better texture. You can skip onion/chilli for a milder version. Serve dosas hot for crispiness.
