Lauki Paratha

  • 1 cup grated lauki (bottle gourd) squeeze lightly to remove excess water
  • 1.25 cups whole wheat flour
  • 2 tbsp finely chopped coriander
  • 1 tsp green chilli paste
  • 1/2 tsp turmeric
  • 1/2 tsp red chilli powder
  • 1 tsp ajwain (carom seeds)
  • 1/2 tsp salt adjust to taste
  • 1 tbsp oil for the dough
  • ghee or oil for cooking as needed

Method
 

  1. Add grated lauki, whole wheat flour, coriander, chilli paste, turmeric, red chilli powder, ajwain, salt and oil to a mixing bowl.
  2. Mix everything well. Lauki will release moisture, so add extra water only if needed. Knead into a soft dough.
  3. Rest the dough for 5 minutes.
  4. Divide the dough into 4 balls. Dust with flour and roll each into a medium-thick paratha.
  5. Heat a tawa and place the rolled paratha on it. Cook until small bubbles appear, then flip.
  6. Apply a little ghee or oil on both sides and cook until golden spots appear.
  7. Repeat with the remaining dough. Serve hot with curd or pickle.

Notes

If the dough becomes too soft because of extra lauki water, add 1–2 tbsp flour. You can add grated ginger for extra flavour.
