  • 1 cup grated lauki (bottle gourd) peeled
  • 1 cup curd (yogurt) whisked
  • 1/4 tsp roasted cumin powder
  • 1/4 tsp black salt adjust to taste
  • 1/4 tsp salt adjust as needed
  • 1 tbsp fresh coriander finely chopped
  • 1 pinch red chilli powder optional

Method
 

  1. Boil the grated lauki for 3 to 4 minutes until it softens. Drain water completely and let it cool.
  2. Whisk the curd in a mixing bowl until smooth.
  3. Add the cooled lauki to the curd and mix gently.
  4. Season with roasted cumin powder, salt, black salt, and red chilli powder.
  5. Add chopped coriander and mix again. Chill for 15 minutes before serving for the best taste.

Notes

Use thick curd for a creamy texture. Squeeze excess water from lauki for a non-watery raita. Ideal with roti, paratha, or light meals.
