
Lemon Almond Bliss Balls

- If your dates are firm or dry, soak them in warm water for about 10 minutes, then drain completely.
- In a food processor or mixer grinder, add almonds and pulse until they are coarsely chopped.
- Add the pitted dates, lemon juice, lemon zest, and a pinch of salt to the almonds. Process until the mixture becomes sticky and starts clumping together (like dough). Stop once mixture holds together when pressed between fingers.
- Using clean, slightly damp hands, take small portions (about 1–1.5 tablespoon) of the mixture and roll into bite-sized balls.
- Optional: Roll each ball in shredded coconut to coat evenly. This gives a nice texture and mild coconut flavor.
- Place the balls in an airtight container and refrigerate for at least 30 minutes before eating. Store in fridge; they stay good for up to 1–2 weeks.
Notes
For Indian pantry style, you can use regular seedless dates if Medjool are not available. If the mixture is too dry to hold, add one more date or a teaspoon of water. Coconut coating is optional but adds nice texture and makes balls less sticky when stored. Great as a healthy snack between meals or for lunchbox.
