  • 1 cup Almond flour fine
  • 1/4 cup Chopped pecans lightly roasted for better flavour
  • 3 tbsp Butter or ghee softened
  • 3 tbsp Erythritol or stevia blend low-carb sweetener
  • 1 tsp Vanilla extract
  • 1 pinch Salt

  • Whisk or spoon

  • Parchment paper
  • Oven or OTG

Method
 

  1. Preheat your oven or OTG to 170°C and line a baking tray with parchment paper.
  2. In a mixing bowl, add softened butter or ghee and sweetener. Mix well until smooth.
  3. Add almond flour, vanilla extract, and a pinch of salt. Mix to form a soft dough.
  4. Fold in the chopped pecans and combine gently.
  5. Scoop small portions and shape them into cookies. Place on the tray.
  6. Bake for 10 to 12 minutes or until the edges turn golden. Let them cool completely to firm up.

Notes

For extra crunch, roast the pecans before mixing. Store cookies in an airtight jar for up to one week.
