Mango Coconut Mojito

  • 1 cup ripe mango pieces fresh or frozen
  • 1.5 cups coconut water chilled
  • 10 leaves fresh mint plus extra for garnish
  • 2 tbsp lime juice freshly squeezed
  • 1 tbsp honey optional, adjust to taste
  • 1/2 cup soda water for topping
  • 1 cup ice cubes as needed

Method
 

  1. Add mango pieces and coconut water to a blender and blend until smooth.
  2. Place mint leaves in each serving glass and gently muddle them using a spoon to release the flavour.
  3. Add lime juice and honey to the glasses and mix lightly.
  4. Fill the glasses with ice cubes and pour the mango-coconut mixture over the ice.
  5. Top with soda water, stir gently and garnish with fresh mint.

Notes

Use fully ripe mango for natural sweetness. You can replace honey with jaggery syrup or skip sweetener if the mango is already sweet. For a thicker mojito, reduce the amount of soda water.
