  • 2 cups fresh methi leaves washed and chopped
  • 1 tbsp oil
  • 1 small onion finely chopped
  • 1 tomato chopped
  • 2 cloves garlic finely chopped
  • 1/4 tsp turmeric powder
  • 1/2 tsp red chilli powder
  • 1/2 tsp coriander powder
  • 1/4 tsp salt adjust to taste

Method
 

  1. Heat oil in a kadai and add chopped garlic. Sauté for a few seconds.
  2. Add chopped onions and cook until soft and light golden.
  3. Mix in the chopped tomatoes and cook until they turn soft.
  4. Add turmeric, red chilli powder and coriander powder. Stir well.
  5. Add the chopped methi leaves and mix gently.
  6. Cook on low flame for 5 to 7 minutes until methi softens and releases its aroma.
  7. Add salt, stir and cook for 1 more minute. Serve hot.

Notes

You can add boiled potatoes or green peas for variation. Always wash methi well to reduce bitterness.
