  • 1/2 cup millet (foxtail or little millet) rinsed well
  • 1/4 cup yellow moong dal washed
  • 1 cup mixed vegetables carrot, beans, peas
  • 1 small onion chopped
  • 1 small tomato chopped
  • 1 tsp ginger-garlic paste
  • 1/4 tsp turmeric powder
  • 1 tsp cumin seeds
  • 1 tbsp ghee or olive oil
  • 2.5 cups water
  • Salt to taste

Method
 

  1. Heat ghee in a pressure cooker and add cumin seeds. Let them crackle.
  2. Add chopped onion and sauté for a minute until soft.
  3. Mix in ginger-garlic paste and cook for a few seconds.
  4. Add tomato and cook until it turns mushy.
  5. Add vegetables, turmeric, and salt. Mix well.
  6. Add rinsed millet and moong dal. Mix everything gently.
  7. Pour in water, close the lid, and cook for 3 whistles on medium flame.
  8. Let the pressure release naturally. Open the cooker and fluff the khichdi.

Notes

You can add spinach, beetroot, or bottle gourd for extra nutrition. Adjust water if you prefer a softer consistency.
