  • 1/2 cup yellow moong dal rinsed well
  • 3 cups milk preferably low-fat for a healthier version
  • 1/3 cup jaggery grated, adjust sweetness
  • 1 tbsp ghee
  • 1/4 tsp cardamom powder
  • 5 almonds sliced
  • 5 cashews chopped

Method
 

  1. Heat ghee in a heavy-bottom pan and roast the rinsed moong dal on low flame until it turns aromatic and slightly golden.
  2. Add 1 cup water and cook the dal on low flame until soft. Mash lightly with the back of a spoon.
  3. Pour in the milk and let it simmer. Stir often so the milk does not stick to the bottom.
  4. Once the kheer thickens, switch off the flame and let it cool slightly. Mix in grated jaggery. Stir until completely dissolved.
  5. Add cardamom powder and mix well. Garnish with sliced almonds and cashews.
  6. Serve warm or chilled.

Notes

Avoid adding jaggery while the kheer is boiling, as it may curdle the milk. Adjust milk quantity based on the thickness you prefer.
