  • 2 cups whole wheat flour freshly sifted
  • 1/2 cup muesli unsweetened
  • 1 tbsp chia seeds
  • 1 tsp active dry yeast
  • 1 tsp salt
  • 1 tbsp jaggery powder optional, mild sweetness
  • 2 tbsp olive oil
  • 3/4 cup warm water add gradually
  • 1 tbsp milk for brushing

Method
 

  1. In a large bowl mix whole wheat flour, muesli, chia seeds, salt, and jaggery powder.
  2. Activate yeast in warm water for 5 minutes until frothy.
  3. Add the yeast mixture and olive oil to the dry ingredients. Knead to form a soft dough.
  4. Cover and let the dough rest for 1 hour or until doubled in size.
  5. Punch the dough, divide into 6 equal balls, and shape into round rolls. Press slightly and make a star pattern using a knife.
  6. Brush with milk and sprinkle some muesli on top.
  7. Bake at 180°C for 18-20 minutes until golden and firm.
  8. Cool the rolls on a wire rack before slicing.

Notes

These rolls stay fresh for 2 days at room temperature. Toasting enhances flavor and crunch.
