
Paneer Capsicum
Paneer Capsicum is a healthy, protein-rich Indian stir-fry made with soft paneer and crunchy capsicum in simple home-style spices.

Method
- Heat oil in a non-stick pan and add cumin seeds. Let them crackle.
- Add sliced onions and sauté until soft and light golden.
- Mix in ginger-garlic paste and cook for a few seconds.
- Add chopped tomatoes and cook until they turn soft and mushy.
- Add turmeric, red chilli powder, coriander powder and salt. Mix well.
- Add sliced capsicum and cook for 3 to 4 minutes until slightly tender but still crunchy.
- Add paneer cubes and gently mix. Cook on low heat for 2 minutes.
- Sprinkle garam masala, mix once, and switch off the flame. Serve hot.
Notes
For extra flavour, add a squeeze of lemon and a handful of fresh coriander before serving.
