  • 1 cup Pumpkin (peeled and chopped) Prefer yellow pumpkin
  • 1.5 cups Milk Toned or low-fat
  • 3 tbsp Jaggery powder Adjust sweetness
  • 1 tsp Ghee
  • 1/4 tsp Cardamom powder
  • 6-8 Cashews Optional
  • 1 tbsp Raisins Optional

Method
 

  1. Add pumpkin pieces to a pan with a little water and cook until soft.
  2. Blend the cooked pumpkin into a smooth puree.
  3. Heat ghee in a pan and fry cashews and raisins until golden. Keep aside.
  4. Pour milk into the same pan and bring it to a light boil.
  5. Add the pumpkin puree and mix well. Cook for 5 to 7 minutes on low flame.
  6. Add jaggery powder and stir until fully dissolved. Do not boil after adding jaggery.
  7. Mix in cardamom powder and add the fried dry fruits.
  8. Serve warm or chilled.

Notes

Use ripe yellow pumpkin for natural sweetness. Adjust jaggery based on taste. For a richer texture, add 2 tbsp coconut milk at the end.
