  • 1 cup cooked quinoa use plain salted quinoa
  • 4 tbsp hummus store-bought or homemade
  • 2 nos whole wheat or multigrain roti lightly warm
  • 1/2 cup finely chopped cucumber
  • 1/2 cup finely chopped capsicum any color
  • 1/4 cup grated carrot
  • 1 tsp lemon juice
  • 1/2 tsp black pepper
  • 1/2 tsp salt adjust to taste

Method
 

  1. In a bowl, mix cooked quinoa, cucumber, capsicum, carrot, lemon juice, salt and pepper.
  2. Warm the rotis lightly so they stay soft for rolling.
  3. Spread 2 tablespoons of hummus on each roti.
  4. Add a generous layer of the quinoa vegetable mix in the center.
  5. Roll tightly like a wrap. If needed, toast lightly on a pan for a firm finish.
  6. Cut into two pieces and serve fresh.

Notes

You can add lettuce, boiled corn or onions for more crunch. For a spicier version, mix a little green chutney into the hummus.
