  • 1/2 cup quinoa rinsed well
  • 2 cups milk you can use low-fat or full-fat
  • 3 tbsp jaggery powder adjust to taste
  • 1/4 tsp cardamom powder
  • 6-8 pieces almonds sliced
  • 6-8 pieces cashews chopped
  • 1 tsp ghee optional for roasting nuts

Method
 

  1. Rinse quinoa under running water and strain well to remove bitterness.
  2. Heat ghee in a small pan and lightly roast almonds and cashews. Keep aside.
  3. In a saucepan, add rinsed quinoa and 1 cup water. Cook on medium heat for about 10 minutes until quinoa softens.
  4. Once quinoa is cooked, add milk and stir well. Let it simmer for 10–12 minutes until the kheer thickens.
  5. Add jaggery powder and stir continuously. Cook for 2–3 minutes.
  6. Add cardamom powder and roasted nuts. Mix and turn off the heat.
  7. Serve warm or chilled.

Notes

You can use coconut milk for a dairy-free version. Adjust jaggery as per sweetness preference. The kheer thickens on cooling, so add a splash of milk before serving if needed.
