  • 1/2 cup quinoa raw
  • 1.5 cups milk use low-fat or regular
  • 1/4 cup jaggery grated, adjust to taste
  • 1/4 tsp cardamom powder
  • 1 tbsp chopped almonds
  • 1 tbsp raisins

Method
 

  1. Rinse quinoa under running water for a minute to remove bitterness.
  2. Add the rinsed quinoa and 1 cup water to a saucepan. Cook on medium heat for 10 minutes until soft.
  3. Pour in the milk, mix well, and cook for another 8 to 10 minutes until the pudding starts thickening.
  4. Stir in jaggery, cardamom powder, almonds, and raisins. Cook for 2 minutes until the jaggery melts.
  5. Switch off the heat. Serve warm or chill for a creamy cold pudding.

Notes

You can replace milk with almond milk or oat milk for a vegan version. Add saffron for extra aroma.
