
Quinoa Pudding
A healthy Indian-style quinoa pudding made with milk, cardamom, and jaggery. Easy, comforting, and perfect for a nutritious dessert.

- Rinse quinoa under running water for a minute to remove bitterness.
- Add the rinsed quinoa and 1 cup water to a saucepan. Cook on medium heat for 10 minutes until soft.
- Pour in the milk, mix well, and cook for another 8 to 10 minutes until the pudding starts thickening.
- Stir in jaggery, cardamom powder, almonds, and raisins. Cook for 2 minutes until the jaggery melts.
- Switch off the heat. Serve warm or chill for a creamy cold pudding.
Notes
You can replace milk with almond milk or oat milk for a vegan version. Add saffron for extra aroma.
