  • 1/3 cup quinoa rinsed well
  • 1 cup mixed vegetables carrot, beans, peas, potato
  • 1/4 cup onion finely chopped
  • 1 tsp garlic minced
  • 1 small tomato chopped
  • 1/2 tsp turmeric powder
  • 1 tsp cumin powder
  • 3 cups water or vegetable broth
  • 1 tsp salt adjust to taste
  • 1/4 tsp black pepper
  • 1 tsp olive oil

Equipment

  • Deep pan or soup pot
  • Stirring spoon

Method
 

  1. Heat oil in a pan and sauté onions and garlic until they turn soft.
  2. Add tomatoes and cook until they soften.
  3. Mix in turmeric and cumin powder. Stir for a few seconds to release the aroma.
  4. Add mixed vegetables and quinoa. Stir well.
  5. Pour in water or broth. Add salt and pepper.
  6. Cover and cook on low flame for 20 to 25 minutes until quinoa becomes soft and vegetables are tender.
  7. Serve hot with fresh coriander or a squeeze of lemon.

Notes

Use vegetable broth for deeper flavour. Add chilli flakes for heat. Ideal for weight loss, digestion and immunity support.
