  • 1/2 cup Ragi (finger millet) flour Prefer fresh flour for best taste
  • 2 tbsp Ghee Adjust as needed
  • 1/3 cup Jaggery Powdered or grated
  • 1.5 cups Water You can use milk for richer taste
  • 2 tbsp Chopped nuts Almonds, cashews or mixed
  • 1/4 tsp Cardamom powder For flavour

Method
 

  1. Heat ghee in a pan on low flame.
  2. Add ragi flour and roast for 3 to 4 minutes until it turns slightly aromatic.
  3. In a separate bowl, mix jaggery with warm water and stir until fully dissolved.
  4. Pour the jaggery water into the roasted ragi while stirring continuously to avoid lumps.
  5. Cook on low heat for 5 to 6 minutes until the mixture thickens into halwa.
  6. Add cardamom powder and chopped nuts. Mix well.
  7. Switch off the flame and let it rest for a minute before serving warm.

Notes

You can replace water with milk for a richer halwa. Adjust sweetness as per taste. For a lighter version, reduce ghee.
