Method
- Add rajgira flour, mashed boiled potato, and sendha namak to a mixing bowl.
- Mix everything with your hands and start adding warm water slowly to form a soft dough.
- Let the dough rest for 5 minutes so it becomes easier to roll.
- Divide the dough into small balls. Dust the surface with a little rajgira flour and gently roll each ball into a small roti.
- Heat a tawa on medium flame. Place the roti on the tawa and cook until small bubbles appear.
- Flip the roti and apply a little ghee. Cook both sides until light brown spots appear.
- Repeat with remaining dough and serve warm with curd or sabzi.
Notes
Rajgira roti is gluten-free, so the dough can be delicate. Using boiled potato helps keep it soft and easy to roll.
