  • 1 cup Rajgira flour (amaranth flour)
  • 2 tbsp Boiled potato, mashed helps bind the dough
  • 1/4 tsp Sendha namak (rock salt) adjust to taste
  • 1/4 cup Warm water add as needed
  • 1 tsp Ghee for cooking

  • Tawa

Method
 

  1. Add rajgira flour, mashed boiled potato, and sendha namak to a mixing bowl.
  2. Mix everything with your hands and start adding warm water slowly to form a soft dough.
  3. Let the dough rest for 5 minutes so it becomes easier to roll.
  4. Divide the dough into small balls. Dust the surface with a little rajgira flour and gently roll each ball into a small roti.
  5. Heat a tawa on medium flame. Place the roti on the tawa and cook until small bubbles appear.
  6. Flip the roti and apply a little ghee. Cook both sides until light brown spots appear.
  7. Repeat with remaining dough and serve warm with curd or sabzi.

Notes

Rajgira roti is gluten-free, so the dough can be delicate. Using boiled potato helps keep it soft and easy to roll.
