  • 2 cups Roasted seviyan (vermicelli) thin variety
  • 1/4 cup Dried mixed veggies carrot, peas, beans
  • 2 tbsp Fried onions optional but adds flavour
  • 1 tsp Cumin seeds
  • 1/2 tsp Turmeric powder
  • 1 tsp Coriander powder
  • 1/2 tsp Black pepper powder
  • 1.5 tsp Salt adjust later while cooking
  • 2 tbsp Dried coriander leaves

Equipment

  • pan or kadhai
  • Airtight jar

Method
 

  1. Add all ingredients to a large bowl and mix gently so spices coat the seviyan evenly.
  2. Transfer the premix into an airtight jar. Store in a cool, dry place for up to 2 months.
  3. To cook: add 1 cup premix to a pan, pour 2 cups hot water, cover and cook for 5 to 7 minutes on low flame.
  4. Fluff with a fork and serve hot.

Notes

You can add dried mint for extra aroma. If using fresh vegetables later, reduce water slightly.
