Soba Noodle Salad with Sesame Dressing

  • 120 g soba noodles buckwheat preferred
  • 1 cup shredded cabbage red or green
  • 1 cup grated carrot
  • 1/2 cup capsicum slices any colour
  • 2 tbsp spring onion finely chopped
For Sesame Dressing
  • 1.5 tbsp sesame oil
  • 1 tbsp soy sauce low sodium
  • 1 tbsp rice vinegar or use lemon juice
  • 1 tsp honey or jaggery
  • 1 tsp toasted sesame seeds
  • 1 tsp grated ginger fresh

Equipment

  • Boiling pot
  • strainer
  • Mixing bowl

Method
 

  1. Boil soba noodles for 5 to 6 minutes until soft. Drain and rinse with cold water.
  2. In a large bowl, add cabbage, carrot, capsicum and spring onion.
  3. Whisk sesame oil, soy sauce, rice vinegar, honey, sesame seeds and ginger to make the dressing.
  4. Add the cooled noodles to the veggies and pour the dressing over it.
  5. Mix gently and serve fresh. You can chill it for 10 minutes for better flavour.

Notes

You can add tofu or paneer for extra protein. Use more veggies for a higher-fiber meal.
