  • 150 g spaghetti whole wheat preferred for healthier option
  • 2 tbsp olive oil
  • 6 cloves garlic, thinly sliced
  • 1 tsp red chilli flakes adjust to taste
  • 1/4 cup fresh coriander, finely chopped for Indian flavour
  • 1 tsp lemon juice optional for freshness
  • 1/2 tsp black pepper
  • 1/2 tsp salt adjust as needed

Method
 

  1. Boil water in a large pot, add salt, and cook the spaghetti until al dente. Drain and keep aside.
  2. Heat olive oil in a pan on low flame. Add sliced garlic and cook until lightly golden.
  3. Add red chilli flakes and black pepper. Mix gently so the spices release flavour.
  4. Add the boiled spaghetti and toss well so it gets coated with garlic oil.
  5. Mix in chopped coriander and lemon juice. Adjust salt if needed.
  6. Serve warm. You can add extra chilli flakes or coriander as per taste.

Notes

Use whole wheat spaghetti for more fibre. Keep the flame low when frying garlic to prevent burning.
