
Spinach & Jowar Paratha
This Spinach and Jowar Paratha is a healthy Indian flatbread made with fresh spinach and jowar flour. It is high in fiber, gluten-free, and perfect for a light lunch or dinner.

- Add jowar flour, spinach, besan, ginger paste, green chilli paste, jeera, turmeric, and salt to a mixing bowl.
- Slowly add warm water and knead into a soft dough. Jowar dough may feel slightly crumbly, so keep pressing with your palms.
- Divide the dough into four equal balls.
- Dust a little jowar flour and gently roll each ball into a medium-thick paratha. If it cracks, press the edges and roll again.
- Heat a tawa on medium flame. Place the paratha and cook until light brown spots appear.
- Flip, drizzle a little oil, and cook both sides until fully done. Repeat for all parathas.
Notes
Serve these parathas hot with curd, chutney, or dal. Jowar makes the paratha gluten-free and gut-friendly, while spinach adds iron and antioxidants.
