
Indian Vegetable Stir-Fry
A quick, healthy and colourful Indian-style vegetable stir-fry made with simple spices and fresh veggies. Perfect for weight-loss meals.

Method
- Heat oil in a kadhai on medium flame. Add cumin seeds and let them crackle.
- Add sliced onions and sauté for a minute until they turn light soft.
- Mix in ginger-garlic paste and cook for 30 seconds.
- Add carrots, beans and broccoli. Stir well and cook for 3 to 4 minutes.
- Add capsicum and sprinkle turmeric, chilli powder, coriander powder and salt.
- Stir-fry everything on medium-high flame for 4 to 5 minutes until veggies stay crisp yet cooked.
- Add 2 tbsp water if you prefer softer vegetables. Cook for 1 minute and turn off the flame.
Notes
You can add mushrooms, zucchini or paneer for extra protein. Keep the flame medium-high for best texture.
