  • 2 medium raw mangoes (kaccha aam)
  • 4 tbsp jaggery (or sugar) adjust to taste
  • 1 tsp black salt
  • 1/2 tsp roasted cumin powder
  • 8-10 leaves fresh mint
  • 3 cups cold water adjust as needed

Method
 

  1. Wash the raw mangoes and boil them in a saucepan with enough water for 10 to 12 minutes until they turn soft.
  2. Let the mangoes cool, then peel off the skin and scoop out the pulp.
  3. Add the mango pulp to a blender with jaggery, black salt, roasted cumin powder, and mint leaves.
  4. Blend into a smooth concentrate. Add a little water if needed.
  5. Add the concentrate to a jug and mix in cold water. Adjust sweetness and spices.
  6. Chill for 2 hours and serve cold. Garnish with mint if you like.

Notes

Use jaggery for a healthier version. You can store the mango concentrate for 4 to 5 days in the fridge.
