Method
- Wash the raw mangoes and boil them in a saucepan with enough water for 10 to 12 minutes until they turn soft.
- Let the mangoes cool, then peel off the skin and scoop out the pulp.
- Add the mango pulp to a blender with jaggery, black salt, roasted cumin powder, and mint leaves.
- Blend into a smooth concentrate. Add a little water if needed.
- Add the concentrate to a jug and mix in cold water. Adjust sweetness and spices.
- Chill for 2 hours and serve cold. Garnish with mint if you like.
Notes
Use jaggery for a healthier version. You can store the mango concentrate for 4 to 5 days in the fridge.
