  • 2 cups Cauliflower florets cleaned and cut
  • 2 medium Potatoes peeled and cubed
  • 1 tbsp Oil preferably mustard or olive oil
  • 1 tsp Cumin seeds
  • 1 tsp Ginger-garlic paste
  • 1 medium Onion finely chopped
  • 2 medium Tomatoes chopped
  • 1/2 tsp Turmeric powder
  • 1 tsp Coriander powder
  • 1/2 tsp Red chilli powder adjust as needed
  • 1/2 tsp Garam masala
  • 2 tbsp Fresh coriander chopped
  • to taste Salt

Equipment

  • 1 Kadai or Non-stick Pan
  • 1 chopping board
  • 1 Knife

Method
 

  1. Heat oil in a kadai and add cumin seeds. Let them crackle.
  2. Add chopped onions and sauté on medium heat until light golden.
  3. Mix in ginger-garlic paste and cook for 1 minute.
  4. Add tomatoes, turmeric, coriander powder, red chilli powder, and salt. Cook until tomatoes soften.
  5. Add potato cubes and mix well. Cover and cook for 5–6 minutes.
  6. Add cauliflower florets and stir gently. Cover again and cook for 10 minutes on low heat.
  7. Sprinkle garam masala, mix once, and cook for 1 more minute.
  8. Turn off heat and garnish with fresh coriander.

Notes

For a healthier version, reduce oil and cook on low heat so the vegetables steam in their own moisture.
