- Preheat the oven to 170°C and line a baking tray with parchment paper.
- In a bowl, mix whole wheat flour, oats, cinnamon, baking soda, and jaggery powder.
- Add grated apple, coconut oil, vanilla, and walnuts. Combine gently.
- Splash a little milk if the dough feels dry. It should be soft and easy to shape.
- Scoop small portions, shape into cookies, and place on the tray.
- Bake for 12 to 15 minutes or until edges turn golden.
- Cool completely on a rack. The cookies firm up as they cool.
Notes
Store the cookies in an airtight box for up to 5 days. You can replace walnuts with almonds or raisins. Great for kids and adults as a healthy snack.
