  • 1 slice whole wheat bread
  • 1/2 medium ripe avocado
  • 1 egg fried or boiled
  • 1/4 tsp black pepper
  • 1/4 tsp pink salt or regular salt
  • 1 tsp lemon juice
  • 1 tbsp chopped coriander optional
  • 1/4 tsp red chilli flakes optional

  • Pan for eggs

Method
 

  1. Toast the whole wheat bread in a pan or toaster until crisp.
  2. Scoop out the avocado into a bowl. Mash it lightly with a fork.
  3. Mix in salt, pepper, lemon juice, coriander, and chilli flakes.
  4. Cook the egg as you prefer: fry, scramble, or boil.
  5. Spread the mashed avocado evenly on the toasted bread.
  6. Place the cooked egg on top and sprinkle a little extra pepper.

Notes

You can add sliced tomatoes, cucumber, or spinach for extra nutrition. Choose multigrain bread for more fiber.
