Method
- Preheat the oven to 200°C and grease a baking tray lightly with olive oil.
- In a mixing bowl, combine mashed potatoes, cornflour, bread crumbs, red chilli powder, garam masala, herbs and salt. Mix well.
- Take a small portion of the mixture, flatten it in your palm and place a little mozzarella cheese in the centre.
- Seal and shape into a smooth ball. Repeat for the remaining mixture.
- Roll each ball lightly in dry bread crumbs for a crisp outer layer.
- Arrange the balls on the greased tray and brush the tops with a little olive oil.
- Bake for 18-20 minutes or until the balls turn golden and crisp.
Notes
For extra flavour, you can add finely chopped coriander or green chilli to the potato mixture. Serve hot with mint chutney or tomato ketchup.
