Method
- Heat oil in a kadai and add mustard seeds. Let them splutter.
- Add sliced onions and green chillies. Sauté for 1–2 minutes until the onions soften.
- Add brinjal slices and mix well. Cook for 5–6 minutes on medium heat.
- Add turmeric, red chilli powder, coriander powder and salt. Mix gently.
- Add tofu cubes and fold them in slowly so they don’t break.
- Cover and cook for 5–7 minutes until brinjal turns soft and tofu absorbs the flavours.
- Garnish with chopped coriander and serve warm.
Notes
You can add bell peppers for extra fibre. Use sesame oil for a stronger flavour if you prefer.
