  • 2 cups Cooked rice Preferably cooled
  • 1 cup Grated carrot Freshly grated
  • 1 Onion (medium, sliced)
  • 1 tsp Ginger-garlic paste
  • 1 tbsp Oil Any cooking oil
  • 1/2 tsp Cumin seeds
  • 1 Green chilli (slit)
  • 1/4 tsp Turmeric powder
  • 1/2 tsp Red chilli powder
  • 1/2 tsp Salt Adjust to taste
  • 2 tbsp Coriander leaves Chopped

Equipment

  • Kadhai or pan
  • grater
  • Spatula

Method
 

  1. Heat oil in a kadhai. Add cumin seeds and let them splutter.
  2. Add sliced onions and sauté until they turn light golden.
  3. Mix in ginger-garlic paste and green chilli. Cook for 1 minute.
  4. Add grated carrot and cook on medium flame for 3 to 4 minutes until slightly soft.
  5. Sprinkle turmeric, red chilli powder, and salt. Mix well.
  6. Add cooked rice and gently mix so the spices coat the rice evenly.
  7. Cook for 2 minutes on low flame. Finish with coriander leaves.

Notes

Use leftover rice for best texture. Add peas or capsicum for extra nutrients.
