Method
- Preheat the oven to 200°C. Wash and dry the potatoes well.
- Cut each potato in half lengthwise. Scoop out the centre gently, leaving a small border.
- Mash the scooped-out potato in a bowl. Add cheese, onions, coriander, pepper, chilli flakes and salt. Mix well.
- Fill each potato shell with the cheese mixture. Press lightly to shape.
- Brush the edges with a little olive oil and place on a baking tray.
- Bake for 20–25 minutes until the cheese melts and the top turns golden.
- Serve hot with mint chutney or enjoy as is.
Notes
For a healthier twist, use part-skim mozzarella and add finely chopped vegetables like capsicum or sweet corn.
