  • 3 tbsp chia seeds
  • 1 cup milk (dairy or almond milk) unsweetened preferred
  • 1 cup ripe mango pulp use fresh mango or canned pulp
  • 1 tsp honey or jaggery optional
  • 1 tbsp chopped nuts almonds/pistachios for topping

Method
 

  1. Add chia seeds and milk to a bowl. Whisk well so there are no lumps.
  2. Let the mixture rest for 5 minutes, then whisk again. This helps the seeds swell evenly.
  3. Cover the bowl and refrigerate for at least 4 hours or overnight for best texture.
  4. Blend the mango pulp until smooth. Sweeten with honey or jaggery if your mango is not sweet.
  5. To serve, add a layer of chia pudding in a bowl or glass and top with mango puree.
  6. Garnish with chopped nuts and enjoy chilled.

Notes

For a thicker pudding, increase chia seeds to 4 tbsp. Use Alphonso or Kesar mango for the best flavour. You can also prepare it the night before for a healthy grab-and-go breakfast.
