  • 250 g boneless chicken breast (cut into small pieces)
  • 2 cups fresh spinach (roughly chopped)
  • 1 tbsp oil preferably olive or sunflower oil
  • 1 small onion (finely sliced)
  • 1 tsp ginger garlic paste
  • 1/2 tsp turmeric powder
  • 1 tsp red chilli powder adjust to taste
  • 1 tsp coriander powder
  • 1/2 tsp garam masala
  • 1/2 tsp salt adjust to taste

  • Non-stick pan
  • Spatula
  • Mixing bowl

Method
 

  1. Heat oil in a non-stick pan on medium flame.
  2. Add sliced onions and sauté until soft and light golden.
  3. Mix in ginger garlic paste and cook for 30 seconds.
  4. Add chicken pieces and cook for 5 to 6 minutes until they turn white and start to brown.
  5. Add turmeric, red chilli powder, coriander powder, salt and stir well.
  6. Cover and cook for 5 minutes so the chicken turns soft.
  7. Add chopped spinach and cook for 2 to 3 minutes until it wilts and blends with the chicken.
  8. Sprinkle garam masala, mix well and switch off the flame.

Notes

You can add capsicum or mushrooms for extra fiber. Serve with roti or enjoy as a high-protein bowl.
