  • 2 cups fresh grated coconut You can use desiccated coconut too
  • 3/4 cup jaggery (powdered) Adjust sweetness as per taste
  • 1 tsp cardamom powder
  • 2 tbsp ghee Helps binding and adds aroma

Equipment

  • Non-stick pan
  • Spatula
  • Mixing bowl

Method
 

  1. Heat a non-stick pan on low flame and add ghee.
  2. Add grated coconut and sauté for 2 to 3 minutes until it smells fragrant.
  3. Add jaggery powder and mix well. Cook on low flame till the jaggery melts and blends with the coconut.
  4. Add cardamom powder and mix again. Cook for another minute until the mixture starts to come together.
  5. Switch off the flame and let the mixture cool slightly.
  6. Grease your palms with a little ghee and roll small portions into round ladoos.
  7. Let them set for 5 minutes. Your healthy Coconut Ladoo is ready.

Notes

Store the ladoos in an airtight container for up to 3 days. You can also add nuts like almonds or cashews for extra crunch and nutrition.
