- Wash, peel and cube the potatoes. Crush the garlic cloves and keep ready.
- In a large pot, add potato cubes, crushed garlic, a pinch of salt and enough water to cover. Bring to a boil.
- Once boiling, reduce heat, cover and cook until potatoes are soft (about 15-18 minutes).
- When potatoes are tender, drain the water using a strainer or colander. Return potatoes and garlic to the pot on low heat for 1 minute to evaporate extra moisture.
- Add low-fat milk and light butter (if using). Using a potato masher, mash everything until smooth and creamy. If mash is too thick, add a splash more milk to reach desired consistency.
- Season with salt and freshly crushed black pepper. Mix well.
- Transfer to a serving bowl and garnish with chopped fresh coriander leaves.
Notes
For a lighter version, skip butter and use only milk. You can also add a pinch of chaat masala for an Indian flavor twist.
