  • 1 cup mixed sprouts (moong, chana, moth) lightly steamed
  • 1/2 cup besan (gram flour)
  • 2 tbsp rice flour for extra crispiness
  • 1 tbsp finely chopped onion optional
  • 1 tsp ginger-garlic paste
  • 1 tsp red chilli powder
  • 1/2 tsp turmeric
  • 1 tsp coriander powder
  • Salt to taste
  • 1–2 tbsp water as needed for binding
  • Oil for shallow frying

Equipment

  • Mixing bowl
  • Frying pan or kadhai
  • Slotted spoon

Method
 

  1. Add the steamed sprouts, besan, rice flour, onions, ginger-garlic paste, and all spices to a mixing bowl.
  2. Sprinkle a little water and mix gently. The mixture should be thick enough to hold shape.
  3. Heat oil in a pan for shallow frying on medium flame.
  4. Take small portions of the mixture and drop them gently into the hot oil.
  5. Fry until the pakoras turn golden and crisp, flipping occasionally.
  6. Remove and place on a tissue. Serve hot with green chutney.

Notes

For extra nutrition, add spinach or grated carrot. Use minimal oil to keep it light.
