Method
- Grind the cashews into a fine powder. Pulse gently to avoid releasing oil.
- Heat water in a non-stick pan and add stevia. Mix well on low flame for 1 minute.
- Add the cashew powder and keep stirring on low flame until it forms a soft dough.
- Add ghee and cardamom. Mix well and turn off the flame.
- Transfer the dough onto butter paper and let it cool slightly.
- Place another sheet of butter paper on top and roll the mixture into a thin layer.
- Cut into diamond shapes and let it set for 10 minutes.
Notes
For best texture, avoid grinding cashews for too long. You can replace stevia with erythritol for a cleaner taste.
