  • 1 cup Cashews (raw, unsalted) lightly warm before grinding for smooth texture
  • 4 tbsp Stevia powder (cooking grade) adjust sweetness as needed
  • 3 tbsp Water
  • 1 tsp Ghee optional but adds smoothness
  • 1 tsp Cardamom powder for flavour

Equipment

  • Non-stick pan
  • Mixer grinder
  • Rolling Pin
  • Butter paper

Method
 

  1. Grind the cashews into a fine powder. Pulse gently to avoid releasing oil.
  2. Heat water in a non-stick pan and add stevia. Mix well on low flame for 1 minute.
  3. Add the cashew powder and keep stirring on low flame until it forms a soft dough.
  4. Add ghee and cardamom. Mix well and turn off the flame.
  5. Transfer the dough onto butter paper and let it cool slightly.
  6. Place another sheet of butter paper on top and roll the mixture into a thin layer.
  7. Cut into diamond shapes and let it set for 10 minutes.

Notes

For best texture, avoid grinding cashews for too long. You can replace stevia with erythritol for a cleaner taste.
