  • 4 small whole-wheat tortillas or homemade chapati
  • 1 cup shredded cabbage
  • 1/2 cup capsicum, thinly sliced any color
  • 1/2 cup carrot, grated
  • 1/2 cup sweet corn, boiled
  • 1 tbsp olive oil for sautéing
  • 1/2 tsp red chilli powder
  • 1/2 tsp cumin powder
  • 1/4 tsp salt adjust to taste
  • 2 tbsp hung curd for topping
  • 1 tbsp fresh coriander chopped

Equipment

  • Non-stick pan
  • Mixing bowl
  • Spatula

Method
 

  1. Heat olive oil in a pan. Add capsicum, carrot, and corn. Sauté for 3 to 4 minutes.
  2. Add chilli powder, cumin powder, and salt. Mix well and cook for another 1 minute.
  3. Warm the tortillas or chapatis on a pan for a few seconds.
  4. Place the sautéed veggies in the centre, add cabbage, hung curd, and coriander on top.
  5. Fold the tacos gently and serve immediately.

Notes

You can add paneer, beans, or more salad veggies for extra protein and fibre.
