Method
- Preheat the oven to 170°C. Grease your cake tin and line it with parchment paper.
- Warm the milk slightly and mix in the powdered jaggery until it dissolves well.
- In a mixing bowl, whisk together whole wheat flour, baking powder, baking soda, and salt.
- Add oil, curd, vanilla, and the jaggery-milk mixture. Mix gently until you get a smooth batter.
- Pour the batter into the cake tin and tap lightly to remove air bubbles.
- Bake for 30–35 minutes or until a toothpick comes out clean.
- Let the cake cool completely before slicing. This helps it set properly.
