  • 1 cup Whole wheat flour
  • 3/4 cup Powdered jaggery use organic if possible
  • 1/2 cup Milk warm
  • 1/4 cup Oil any neutral oil
  • 1 tsp Baking powder
  • 1/2 tsp Baking soda
  • 1 tsp Vanilla essence
  • 2 tbsp Curd helps softness
  • 1 pinch Salt

Equipment

  • Cake tin (6 or 7 inch)

Method
 

  1. Preheat the oven to 170°C. Grease your cake tin and line it with parchment paper.
  2. Warm the milk slightly and mix in the powdered jaggery until it dissolves well.
  3. In a mixing bowl, whisk together whole wheat flour, baking powder, baking soda, and salt.
  4. Add oil, curd, vanilla, and the jaggery-milk mixture. Mix gently until you get a smooth batter.
  5. Pour the batter into the cake tin and tap lightly to remove air bubbles.
  6. Bake for 30–35 minutes or until a toothpick comes out clean.
  7. Let the cake cool completely before slicing. This helps it set properly.

Notes

Add cardamom powder or chopped nuts for extra flavour and nutrition.
