Healthy Potato Sandwich

This healthy Indian potato sandwich is easy, quick and perfect for breakfast or a light meal. Made with spiced mashed potatoes and whole wheat bread.

  • 2 boiled potatoes (medium) mashed
  • 4 slices whole wheat bread
  • 1 tbsp finely chopped coriander
  • 1 tsp green chilli, finely chopped adjust to taste
  • 1/2 tsp red chilli powder
  • 1/4 tsp turmeric powder
  • 1/2 tsp cumin powder
  • 1/2 tsp chaat masala
  • 1 tbsp butter or ghee for toasting
  • Salt to taste

Equipment

  • Non-stick tawa or pan
  • Mixing bowl
  • Spatula

Method
 

  1. In a mixing bowl, mash the boiled potatoes until smooth.
  2. Add coriander, green chilli, red chilli powder, turmeric, cumin powder, chaat masala and salt. Mix well.
  3. Spread the potato mixture evenly on two bread slices and cover with the remaining slices.
  4. Heat a tawa and add a little butter. Place the sandwich and toast on medium heat until golden and crisp.
  5. Flip and toast the other side until crisp. Serve hot with chutney.

Notes

For a healthier version, you can toast the sandwich without butter or use an air fryer.
