  • 200 grams Paneer firm paneer, cut into 1.5-2 cm cubes
  • 1 tbsp Olive oil or light cooking oil
  • ½ tsp Turmeric powder
  • ½ tsp Cumin powder
  • ½ tsp Red chilli powder or paprika adjust to taste
  • ¼ tsp Garam masala optional, for extra flavour
  • Salt to taste
  • 1 tbsp Fresh lemon juice optional, for serving
  • 2 tbsp Fresh coriander leaves chopped, for garnish

Method
 

  1. Cut the paneer into 1.5-2 cm cubes and keep them ready.
  2. In a mixing bowl, add olive oil, turmeric powder, cumin powder, red chilli powder (or paprika), garam masala, and salt. Stir to form a light marinade.
  3. Add paneer cubes to the bowl and gently toss until every cube is coated with the spice-oil mixture.
  4. Preheat your oven to 200°C (or keep a non-stick pan ready on medium heat).
  5. If using oven: place the marinated paneer cubes on a baking sheet lined with parchment paper in a single layer and roast for 12-15 minutes, turning once halfway for even roasting.
  6. If using a pan: drizzle a few drops of oil, then add paneer cubes. Roast on medium heat for about 8-10 minutes, turning gently so all sides become lightly golden.
  7. Once roasted, remove from heat. Drizzle fresh lemon juice and sprinkle chopped coriander leaves before serving.
  8. Serve hot with green chutney, salad or whole-wheat roti for a healthy meal or snack.

Notes

For a lighter version, use low-fat paneer or press paneer to remove excess water before marinating. Do not overcook paneer to keep it soft and avoid drying.
