Method
- In a bowl, mix wheat flour, jaggery powder, salt and ghee.
- Add warm water little at a time and knead into a firm dough. Rest it for 10 minutes.
- Divide the dough into two parts and roll each portion into a thick roti.
- Cut into small diamonds or squares using a knife.
- Heat oil on medium flame and fry the pieces in small batches until crisp and golden.
- Remove on a strainer and let them cool completely before storing.
Notes
For extra crunch, fry on medium-low flame. You can also bake them at 180°C for 12–15 minutes for an even healthier version.
