Healthy Shakarpara / Shankarpali

  • 1.5 cups Whole wheat flour
  • 1/4 cup Jaggery powder adjust sweetness as needed
  • 2 tbsp Ghee
  • 1/4 tsp Salt
  • 1/3 cup Warm water for kneading
  • 2 cups Oil for frying

  • Rolling board and pin
  • Deep pan for frying

Method
 

  1. In a bowl, mix wheat flour, jaggery powder, salt and ghee.
  2. Add warm water little at a time and knead into a firm dough. Rest it for 10 minutes.
  3. Divide the dough into two parts and roll each portion into a thick roti.
  4. Cut into small diamonds or squares using a knife.
  5. Heat oil on medium flame and fry the pieces in small batches until crisp and golden.
  6. Remove on a strainer and let them cool completely before storing.

Notes

For extra crunch, fry on medium-low flame. You can also bake them at 180°C for 12–15 minutes for an even healthier version.
