Method
- Wash the basmati rice thoroughly and soak in water for 20 minutes. Drain and set aside.
- Heat oil (or light ghee) in a large pot on medium heat. Add sliced onions and sauté until they turn light golden.
- Add ginger-garlic paste and sauté for another minute until the raw aroma disappears.
- Add mixed chopped vegetables, turmeric, red chilli powder, garam masala and salt. Mix well and cook for 5 minutes.
- Add water to the vegetables, bring to a boil. Then add the drained rice. Stir gently, cover the pot with a lid and simmer on low heat until rice is cooked and water is absorbed (about 15–18 minutes).
- After cooking, gently fluff the rice with a fork. Cover again and let it rest for 5 minutes before serving.
Notes
For a healthier version, use brown basmati rice and limit oil to 1 tbsp. Add more vegetables for fiber and nutrients.
