  • 2 eggs fresh
  • 2 tbsp onion, finely chopped
  • 1 tbsp tomato, finely chopped
  • 1 tbsp capsicum, finely chopped optional but healthy
  • 1 tsp oil or ghee
  • 1/4 tsp turmeric powder
  • 1/4 tsp red chilli powder adjust to taste
  • to taste salt
  • 1 tbsp fresh coriander, chopped for garnish

Equipment

  • Non-stick pan
  • Whisk or fork
  • Spatula

Method
 

  1. Crack the eggs into a bowl. Add salt and whisk well until smooth.
  2. Heat oil in a non-stick pan on medium flame.
  3. Add onions and sauté for a minute. Add tomato and capsicum and cook until soft.
  4. Mix in turmeric and red chilli powder.
  5. Pour the whisked eggs into the pan and cook gently, stirring slowly.
  6. Cook until the eggs turn soft and fluffy. Turn off the heat.
  7. Garnish with coriander and serve hot.

Notes

For extra nutrition, use more veggies like spinach or mushrooms. Cook on low flame for softer eggs.
