  • 1 cup Thick poha rinsed and drained
  • 2 tbsp Peanuts
  • 1 tbsp Oil
  • 1/2 tsp Mustard seeds
  • 6 leaves Curry leaves
  • 1 no Green chilli, chopped
  • 1/4 cup Onion, finely chopped
  • 1/4 tsp Turmeric powder
  • 1/2 tsp Salt adjust to taste
  • 1 tbsp Lemon juice
  • 2 tbsp Coriander leaves, chopped

  • Kadhai or pan
  • strainer

Method
 

  1. Rinse poha in a strainer under running water for a few seconds. Keep aside to soften.
  2. Heat oil in a pan. Add peanuts and roast till crisp. Remove and keep aside.
  3. In the same oil, add mustard seeds, curry leaves and green chilli. Let them splutter.
  4. Add onions and sauté till they turn soft.
  5. Mix in turmeric powder and salt.
  6. Add softened poha and gently mix on low heat.
  7. Cover and cook for 2 minutes. Switch off the flame.
  8. Add lemon juice, roasted peanuts and coriander leaves. Mix and serve warm.

Notes

For extra nutrition, you can add grated carrot or green peas while sautéing the onions.
