Method
- Add jowar flour and salt to a bowl. Mix well.
- Pour hot water little by little and start mixing with a spoon first.
- When the dough cools slightly, knead it by hand until smooth and soft.
- Divide the dough into 2 balls. Dust with dry flour and gently roll into a medium-thin roti.
- Heat a tawa. Place the roti and cook until small bubbles appear. Flip and cook the other side.
- Press edges lightly with a cloth or spatula to help the roti puff. Remove when both sides have brown spots.
- Serve warm with dal, sabzi or curd.
Notes
Using hot water gives softer rotis. Always knead the dough fresh before making rotis as jowar dough dries quickly.
