  • 1/2 cup quinoa uncooked
  • 200 grams boneless chicken breast cut into small pieces
  • 2 cups kale leaves washed and chopped
  • 1 tbsp olive oil
  • 1/2 tsp turmeric powder
  • 1 tsp red chilli powder
  • 1 tsp coriander powder
  • 1/2 tsp black pepper
  • 1 tsp ginger garlic paste
  • 1/4 tsp salt adjust to taste
  • 1 lemon for squeezing

Method
 

  1. Rinse quinoa well and cook it in a saucepan with 1 cup water until soft and fluffy. Set aside.
  2. Heat olive oil in a pan. Add chicken pieces and sauté for 2 minutes.
  3. Add ginger garlic paste, turmeric, chilli powder, coriander powder, pepper and salt. Mix well and cook on medium flame for 8 to 10 minutes until chicken turns golden and cooked through.
  4. Add chopped kale and sauté for 2 to 3 minutes until it softens slightly but stays bright green.
  5. In a bowl, add a layer of quinoa, top with chicken and kale mixture, and squeeze fresh lemon on top.

Notes

You can add carrots, bell peppers or cucumber for extra crunch and nutrients.
